I like Cento &#8220;San Marzano&#8221;<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Medium<\/td>\n<td>Yellow Onion, minced<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Cloves<\/td>\n<td>Garlic, finely minced<\/td>\n<\/tr>\n<tr>\n<td>12<\/td>\n<td>Leaves<\/td>\n<td>Fresh Basil<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>t<\/td>\n<td>Dried Oregano<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>t<\/td>\n<td>Sugar<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>T<\/td>\n<td>Olive Oil<\/td>\n<\/tr>\n<tr>\n<td><\/td>\n<td><\/td>\n<td>Freshly Ground Pepper to taste<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ul>\n<li>If you&#8217;re not using the brand\/style above, open the can and taste the tomatoes (not the juice they were packed in).If they don&#8217;t taste like they were picked yesterday, go back to the store and buy a different brand. I&#8217;ve had better luck with local brands than imported tomatoes from Italy.<\/li>\n<li>Heat the olive oil on medium, and a couple of pieces of onion in a heavy 6 quart pot until just quietly sizzling, then add the rest of the onion. Increase or decrease heat to keep the onions cooking slowly.<\/li>\n<li>Cook until translucent and softened but not browned<\/li>\n<li>Add garlic and cook until softened and translucent.<\/li>\n<li>Add oregano and basil and mix with spoon.<\/li>\n<li>Add tomatoes, crush with a potato masher<\/li>\n<li>Add sugar if necessary<\/li>\n<li>Stir well and bring to simmer<\/li>\n<li>Add pepper to taste<\/li>\n<li>Simmer uncovered on low until some of the tomatoes break down <strong>and there&#8217;s no watery liquid.<\/strong><\/li>\n<\/ul>\n<p>Note that there&#8217;s no salt listed in the ingredients.
