It has varying textures, a light smoky aroma and a really nice flavor,without being overly spicy.<\/p>\n<p>This recipe also works nicely with 16 Bean mix, (or pretty much any kind of dried beans you want to use). If you don&#8217;t have smoked Paprika, you can substitute regular Paprika and a 1\/4t liquid smoke.<\/p>\n<table border=\"0\">\n<tbody>\n<tr>\n<td colspan=\"3\"><strong>Ingredients:<\/strong><\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Lb<\/td>\n<td>Smoked Bacon, Uncured &#8211; no nitrates or nitrites<\/td>\n<\/tr>\n<tr>\n<td>32<\/td>\n<td>Oz<\/td>\n<td><em>Low Sodium<\/em> Chicken Stock<\/td>\n<\/tr>\n<tr>\n<td>32<\/td>\n<td>Oz<\/td>\n<td>Water<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Lb<\/td>\n<td>Package Assorted 16 Beans (dried)<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Medium<\/td>\n<td>Yellow Onion, minced<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Stalks<\/td>\n<td>Celery with greens, cut into 1\/3\u2033 pieces<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>Medium<\/td>\n<td>Carrots, finely cut into 1\/4\u2033 pieces<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Small<\/td>\n<td>Red Bell Pepper, cut into 1\/4\u2033 x 1\/2\u2033 pieces<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>Cloves<\/td>\n<td>Garlic, minced<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>T<\/td>\n<td>Apple Cider Vinegar<\/td>\n<\/tr>\n<tr>\n<td>1 3\/4<\/td>\n<td>T<\/td>\n<td>Smoked Paprika<\/td>\n<\/tr>\n<tr>\n<td>1 3\/4<\/td>\n<td>t<\/td>\n<td>Oregano<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>t<\/td>\n<td>Ground Cumin<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>t<\/td>\n<td>Garlic Powder<\/td>\n<\/tr>\n<tr>\n<td><\/td>\n<td><\/td>\n<td>Kosher salt and fresh ground black pepper to taste<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ul>\n<li>Examine beans and remove anything that isn&#8217;t a bean, then rinse.<\/li>\n<li>Place in a large pot, add water to cover by at least three inches, cover and bring to a boil.<\/li>\n<li>Boil covered for 2 minutes<\/li>\n<li>Let sit covered for one hour, drain, rinse place in a bowl and set aside. Dry pot.<\/li>\n<li>Cut the bacon into 2&#8243; pieces and add to pot. Heat on medium and stir frequently, until bacon is cooked. It&#8217;s important to fully cook the bacon, since it won&#8217;t get any crispier after you add the liquid.<\/li>\n<li>Once the bacon is cooked, move it to a small bowl and discard all the grease except for one tablespoon.<\/li>\n<li>Return the pot to the heat and add all the veggies except the garlic.\u00a0 Add a heavy pinch of salt and sweat until slightly soft. Add the garlic, and continue until soft and transparent.<\/li>\n<li>Add all the spices and stir.<\/li>\n<li>Add the chicken stock and deglaze the bottom of the pot (scrape up all the brown bits)<\/li>\n<li>Add the beans to the pot, add the water, stir and bring to a simmer.<\/li>\n<li>Place in a 350\u00b0 oven and cook until the beans are soft (approximately another two to three hours).<\/li>\n<li>Taste and add salt and pepper as needed.<\/li>\n<li><em>Optional but recommended:<\/em> Refrigerate overnight, then skim excess fat from surface before reheating and serving.<\/li>\n<li>Add bacon back to individual bowls when serving, so it doesn&#8217;t get soggy.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This soup is visually interesting because of all the different sizes and colors of beans.
