It&#8217;s not just &#8220;rice that&#8217;s yellow&#8221; it&#8217;s authentic Mexican Yellow Rice with Corn and is absolutely packed with tons of flavor.<\/p>\n<p>The pan always comes back empty and I&#8217;ve never had leftovers when serving this.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<table border=\"0\">\n<tbody>\n<tr>\n<td style=\"font-weight: bold;\" colspan=\"3\">For the Sofrito<\/td>\n<\/tr>\n<tr>\n<td>1\/2<\/td>\n<td>Medium<\/td>\n<td>Onion<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td><\/td>\n<td>Cubanelle Pepper<\/td>\n<\/tr>\n<tr>\n<td>1\/2<\/td>\n<td>Head<\/td>\n<td>Garlic, peeled, hard ends removed<\/td>\n<\/tr>\n<tr>\n<td>1\/4<\/td>\n<td>Bunch<\/td>\n<td>Cilantro<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td><\/td>\n<td>Plum Tomato<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td><\/td>\n<td>Red Bell Pepper<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>&nbsp;<\/p>\n<table>\n<tbody>\n<tr>\n<td style=\"font-weight: bold;\" colspan=\"3\">For the Achiote Oil<\/td>\n<\/tr>\n<tr>\n<td>1\/2<\/td>\n<td>Cup<\/td>\n<td>Olive Oil<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Tablespoon<\/td>\n<td>Achiote (Annato) Seeds<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>&nbsp;<\/p>\n<table>\n<tbody>\n<tr>\n<td style=\"font-weight: bold;\" colspan=\"3\">For the Rice<\/td>\n<\/tr>\n<tr>\n<td>10<\/td>\n<td>Grams<\/td>\n<td>Kosher Salt (about 3\/4 T of Morton&#8217;s Kosher Salt)<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Teaspoon<\/td>\n<td>Peppercorns<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Teaspoon<\/td>\n<td>Cumin Seed<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td><\/td>\n<td>Bay Leaf<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>\u00a0Cups<\/td>\n<td>Medium Grain White Rice<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Pound Bag<\/td>\n<td>Corn Kernels, Frozen<\/td>\n<\/tr>\n<tr>\n<td>4<\/td>\n<td>Cups(approx)<\/td>\n<td>Low Sodium Chicken Broth or Stock<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Cup<\/td>\n<td>Water &#8211; if needed<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>Equipment:<\/strong><\/p>\n<ul>\n<li>A large pan with a tight fitting glass lid<\/li>\n<li>Spice grinder or mortar and pestle<\/li>\n<\/ul>\n<p><b>Preparation:<\/b><\/p>\n<ul>\n<li><strong>Sofrito:<\/strong>\n<ul>\n<li>Place the Onion, Cubanelle Pepper, Garlic, Cilantro, Tomato and Red Bell Pepper in a food processor and pulse until almost smooth.<\/li>\n<\/ul>\n<\/li>\n<li><b>Spices<\/b>\n<ul>\n<li>Put the salt, cumin seeds, bay leaf, and peppercorns in a spice grinder and grind to a powder.<\/li>\n<\/ul>\n<\/li>\n<li><strong>Achiote Oil:<\/strong>\n<ul>\n<li>Add the olive oil and achiote seeds to a pan\u00a0and heat on medium until sizzling. Remove from heat and let cool until sizzling stops. Remove the achiote seeds and discard them.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Cooking:<\/strong><\/p>\n<ul>\n<li>Put the pan\u00a0back on the heat, set to medium-high and add the sofrito.<\/li>\n<li>Cook and stir until <span style=\"text-decoration: underline;\">all the water is gone\u00a0<\/span>and the sofrito is sizzling. You can tell by looking at the liquid. Initially there will be oil droplets floating in water, when it&#8217;s ready, there won&#8217;t be any water, only\u00a0oil.<\/li>\n<li>Add the ground spices.<\/li>\n<li>Add the rice rice and cook and stir until the rice looks chalky.<\/li>\n<li>Add corn and stir.<\/li>\n<li>Add the chicken stock and a little water if necessary.<\/li>\n<li>Cover the pan with a glass lid and bring to a boil on medium-high heat.<\/li>\n<li>Once it boils, reduce the heat to a simmer. Watch the rice. When you can no longer see <em>any<\/em> water, turn the heat to &#8220;low&#8221;.<\/li>\n<li><span style=\"line-height: 1.5;\"><strong>Don\u2019t lift the lid!<\/strong>\u00a0<\/span><\/li>\n<li><span style=\"line-height: 1.5;\">After 15 minutes, taste the rice and see if it&#8217;s too dry. If it is, add more water and leave the burner on low until absorbed.
