And with a little extra work, it&#8217;s the &#8220;meal that keeps on giving.&#8221;<\/p>\n<p>You can get a couple of nice dinners out of it, then a couple of good sandwiches, then just when you&#8217;re ready to toss it, you read this and discover it makes awesome soup!<\/p>\n<p>I <em>might<\/em> even like this better than chicken soup from raw chicken:<\/p>\n<p>Cooking note: This isn&#8217;t a &#8220;fussy&#8221; or time consuming dish. There is no precision cutting involved. If you can peel the garlic and hack up all the veggies into reasonable size chunks, everything will be awesome!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<table>\n<tbody>\n<tr>\n<td>1<\/td>\n<td>Sam&#8217;s Club Roasted Chicken, eaten, hacked in half, down the backbone<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Large Yellow Onion, peeled and cut into chunks<\/td>\n<\/tr>\n<tr>\n<td>1\/2<\/td>\n<td>Head of garlic, smashed and peeled, hard ends and any green insides removed<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Stalks Celery, chopped<\/td>\n<\/tr>\n<tr>\n<td>3<\/td>\n<td>Carrots, chopped<\/td>\n<\/tr>\n<tr>\n<td><\/td>\n<td>Kosher Salt and Fresh Ground Pepper<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ul>\n<li>Add all the veggies to the pressure cooker, then add the chicken<\/li>\n<li>Add about one teaspoon of pepper and 2 teaspoons of kosher salt to the pot<\/li>\n<li>Add just enough water to about an inch below the top of the chicken<\/li>\n<li>Close pressure cooker and heat on high until the &#8220;high pressure&#8221; indicator shows<\/li>\n<li>Reduce heat to medium low, or whatever heat is needed to maintain high pressure.<\/li>\n<li>Cook at high pressure for 15 minutes, turn off burner, let cool until there is no pressure left, then remove the lid.<\/li>\n<li>Pour everything though a large strainer into a bowl<\/li>\n<li>Pick though the strained ingredients, discard any bones and put everything else into the bowl<\/li>\n<li>Cover and refrigerate overnight.<\/li>\n<\/ul>\n<p>The next day . . .<\/p>\n<ul>\n<li>Remove the fat from the top of the bowl (hands work the best for this)<\/li>\n<li>Gently heat until hot (at least 160\u00baF), but don&#8217;t boil.<\/li>\n<li>Add salt or pepper if needed<\/li>\n<li>Serve with <a href=\"\/index.php\/recipes-2\/soups-2\/matzo-balls\">Matzoh balls<\/a> or Noodles, as desired.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Sam&#8217;s Club makes some really tasty roasted chicken.
