The point cut is fattier, the flat is leaner.<br \/>\nThe choice is yours. Either works well, depending on what you like.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ul>\n<li>Add the water, sugar and salt to a pot big enough to easily hold a gallon<\/li>\n<li>Heat and stir until it&#8217;s all dissolved<\/li>\n<li>Remove from heat, then add all the remaining spices and the ice, and stir until the mixture is chilled.<\/li>\n<li>Place the brisket in a vacuum bag, then add the liquid.<\/li>\n<li>Vacuum and seal the bag, and place in refrigerator for between 2 to 3 weeks, flipping the bag over\u00a0every few days.<\/li>\n<\/ul>\n<p><strong>Two or three weeks later . . .<\/strong><\/p>\n<ul>\n<li>Remove brisket from bag, rinse well and dry with paper towels. Discard everything else.<\/li>\n<li>Vacuum seal brisket<\/li>\n<li>Place in a sous vide and cook at 170\u00b0F for 24 hours. You can also do <a class=\"ingredients-link\" href=\"http:\/\/www.seriouseats.com\/2011\/03\/how-to-make-corned-beef-st-patricks-day-simmering-brisket-meat-the-food-lab.html\">more or less time at other temperatures<\/a>, which changes both the texture of the meat and the amount lost to moisture. Hotter, faster cooking means more lost moisture and less meat when you&#8217;re all done.<\/li>\n<li>Chill cooked beef overnight to make slicing easier.<\/li>\n<\/ul>\n<p><strong>Serving<\/strong><\/p>\n<ul>\n<li>Bring a pot of water to a boil and insert steamer basket. The water should be well below the basket bottom. We&#8217;re steaming, not boiling.<\/li>\n<li>Slice the chilled corned beef as desired.<\/li>\n<li>Add to steamer basket; steam until hot, then serve!<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This looks and tastes just like the corned beef I ate at the Second Avenue Deli, which was absolutely heavenly.
