{"id":5012,"date":"2017-12-01T15:24:10","date_gmt":"2017-12-01T20:24:10","guid":{"rendered":"https:\/\/www.bupkis.org\/?page_id=5012"},"modified":"2023-05-13T15:29:46","modified_gmt":"2023-05-13T20:29:46","slug":"chicken-soup-shhh-dont-tell","status":"publish","type":"page","link":"https:\/\/www.bupkis.org\/index.php\/recipes-2\/soups-2\/chicken-soup-shhh-dont-tell","title":{"rendered":"Chicken Soup Secret Recipe"},"content":{"rendered":"<p>So good, you&#8217;ll plotz!<\/p>\n<p>This one uses <a href=\"https:\/\/www.betterthanbouillon.com\/products\/product-detail.aspx?productid=44\" target=\"_blank\" rel=\"noopener\">Better Than Bouillon<\/a> and is as good or better than anything I&#8217;ve ever made from scratch, and takes about an hour.<\/p>\n<p>Even if you always make chicken soup from scratch, you owe it to yourself to try this at least once.<\/p>\n<table border=\"0\" cellspacing=\"2\" cellpadding=\"2\">\n<tbody>\n<tr>\n<td colspan=\"3\"><strong>Ingredients<\/strong>:<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">1 1\/2<\/td>\n<td>Tablespoons per quart water<\/td>\n<td><a class=\"ingredients-link\" href=\"https:\/\/www.betterthanbouillon.com\/products\/product-detail.aspx?productid=44\">Better Than Bouillon Chicken Base<\/a><\/td>\n<\/tr>\n<tr>\n<td align=\"right\">3<\/td>\n<td>Pounds<\/td>\n<td>Boneless, skinless chicken thighs, cut into \u00bd&#8221; x \u00bd&#8221; chunks.\u00a0 (bite size, not critical, don&#8217;t bother trimming fat)<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">4<\/td>\n<td>Stalks<\/td>\n<td>Celery, cut bite-sized, <em>including leafy tops<\/em><\/td>\n<\/tr>\n<tr>\n<td align=\"right\">2<\/td>\n<td>Small<\/td>\n<td>Yellow onions, peeled, cut bite-sized<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">4<\/td>\n<td>Medium<\/td>\n<td>Whole carrots, peeled and sliced into approximately \u00bc&#8221; disks<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">8<\/td>\n<td>Cloves<\/td>\n<td>Garlic, smashed, peeled and roughly chopped.<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">4<\/td>\n<td>Medium<\/td>\n<td>Parsnips, peeled &amp; cut into bite-size chunks<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">1\/2<\/td>\n<td>\u00a0Bunch<\/td>\n<td>Parsley, stems removed, chopped medium-fine<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">2<\/td>\n<td><\/td>\n<td>Bay Leaves<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">To taste<\/td>\n<td><\/td>\n<td>Fresh Ground Pepper &amp; Salt<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">Optional<\/td>\n<td><\/td>\n<td>Fine Egg Noodles, cooked to directions on bag<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>Mix 6 Tablespoons of chicken base with 4 quarts of hot water and add to pot.<\/li>\n<li>Add everything else <strong>except the chicken<\/strong> to the pot.<\/li>\n<li>Slowly bring to a gentle simmer and cook for 30-45 minutes, until the veggies are almost soft.<\/li>\n<li><strong>Important:<\/strong> Taste it. If it doesn&#8217;t taste &#8220;chicken-y&#8221; enough, add more chicken base. If it&#8217;s not salty enough, add salt.<\/li>\n<li>Add the chicken and cook until the internal temperature of the chicken is about 190\u00b0F on an instant-read thermometer.<\/li>\n<li>Add pepper to taste. It takes quite a bit of pepper. Could easily be 2 tsp or more.<\/li>\n<li><em>Optional, but worth the time<\/em>: Chill overnight and remove fat from surface of soup.<\/li>\n<li>Serve with <a href=\"\/index.php\/recipes-2\/soups-2\/matzo-balls\">Matzo Balls<\/a>, noodles or dumplings.
