A note about the pot lid: <\/strong>Google the manufacturer&#8217;s instructions for your pot and make sure that the pot and lid can handle 450\u00b0F in the oven.<\/p>\n<table border=\"0\" cellspacing=\"2\" cellpadding=\"2\">\n<tbody>\n<tr>\n<td colspan=\"3\"><strong>Ingredients<\/strong>:<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">500<\/td>\n<td>grams<\/td>\n<td>Bread Flour, unbleached, un-enriched, if possible.<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">400<\/td>\n<td>grams<\/td>\n<td>Water &#8211; if you have great tap water, that&#8217;s fine.<br \/>\nIf it smells bad or has chlorine or there&#8217;s anything else wrong, use bottled water.<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">1\/4<\/td>\n<td>teaspoon<\/td>\n<td>Instant Yeast<\/td>\n<\/tr>\n<tr>\n<td align=\"right\">12<\/td>\n<td>grams<\/td>\n<td>Kosher Salt<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>Directions compliments of Steve W.<\/strong><\/p>\n<p><strong>Directions<\/strong>:<\/p>\n<ul>\n<li>Whisk yeast and water together until dissolved.<\/li>\n<li>Add flour and salt. Stir thoroughly with handle of wooden or plastic spoon until there is no dry flour visible.<\/li>\n<li>Cover and leave for \u00bd &#8211; 1 hour.<\/li>\n<li>When it looks like dough, take out of bucket.<\/li>\n<li>Stretch dough, fold in half, rotate 90<span style=\"font-family: Symbol, serif;\">\u00b0<\/span>. Repeat 4 \u2013 6 times until you feel the dough tighten up<\/li>\n<li>Put it back in bowl, cover. Let it double in size, approximately 4 hours.<\/li>\n<li>Do stretch again as above. Return to bowl. Let it double in size, approximately 4 hours.<\/li>\n<li>Preheat oven and pot with lid to 450<span style=\"font-family: Symbol, serif;\">\u00b0<\/span>\u00a0about \u00bd hour before baking.<\/li>\n<li>When doubled in size, transfer dough to hot pot; use gravity to help. Sprinkle with sesame seeds, cover and put into oven.<\/li>\n<li>Remove lid after about 20-30 minutes and bake another 20 minutes with lid off.<\/li>\n<li>When the bread looks crusty and dark brown it is done. Cool on rack. Enjoy!<\/li>\n<\/ul>\n<p>Makes 1 loaf.<\/p>\n<p>Note that the timing isn&#8217;t critical as long as it has at least doubled in size.
